Simple coconut yogurt with granola and berries

Simple coconut yogurt makes a healthy, high-fat breakfast or snack. If you want to take it up a notch, add some fresh berries (or cook them down with chia seeds), a sprinkle of hemp seeds or a gluten free granola and you have a delicious start to your day. This recipe is very mild on the ferment, making it perfect for kids.

Simple Coconut Yogurt*

Ingredients:

1 16-oz can full fat coconut milk
1 RENEW LIFE probiotic capsule, opened up
2 T. maple syrup
1 tsp. vanilla
2 cups Zuma Valley Coconut Meat, thawed

Directions:

In a blender add your coconut milk, maple syrup, vanilla, and coconut meat. Blend until smooth. Add your probiotic capsule – blend again. Cover your jar with a cheesecloth and place in the oven (do not turn oven on) overnight or for about 12 hours.

Remove, give a good stir and refrigerate.

*This is a mild yogurt better suited for kids or if you are sensitive to the ferment.  If you prefer a stronger ferment, you can add two probiotic capsules or a tablespoon of coconut kefir.
